Greystone Golf & Country Club opens new restaurant

When Greystone Golf & Country Club’s members voted on a name for their new restaurant, they chose one symbolic of both the club’s past and its present services. Cellar 91, named for the club’s opening in 1991 and the 91 bottles of wine available, opened for business April 19.

Executive Chef Andre Halston said Cellar 91, in the Founders Clubhouse, is a different dining experience from the former, smaller club restaurant. The menu he developed includes meals from breakfast to dessert, including soups, salad, small plates, thin-crust pizza, made-from-scratch sauces and “fish that has a story.” 

“I can tell you exactly what area of the Gulf or the Pacific or on the Atlantic side our fish came from,” Halston said.

The restaurant can host casual meals or planned parties, and he said he also plans to offer to-go orders from his same menu for neighborhood residents. Many of the ingredients come from local producers.

“We think it’s very important that we have a local connection,” Halston said.

Cellar 91 is open for lunch and dinner Tuesday-Sunday and breakfast Friday-Sunday, but closed Monday. It seats about 110 people indoors, as well as about 60 on the outdoor patio overlooking Founders Course hole 18. It also includes a bar area with three flat-screen TVs and a mural of Founders hole 7 on one wall. Halston said he has been involved from the beginning in the design and creation of the 5,500-square-foot space to make sure his kitchen team could be in sync.

“From beginning to end, you play a role in it because you have to be an orchestra reader to set up your team to be successful,” he said.

Having this larger space also means Halston has more room for new equipment, more food storage and experimenting with new menu items.

“It allows me to be much more creative, to come up with ideas and to execute food the way it was intended,” he said. “I will always change and innovate and look to introduce new items.”

Cellar 91 is part of several renovations that have happened since 2014, including new fitness, childcare and golf operations spaces. These improvements were made at the request of members and also tie into the renovation of the Founders golf course for the Regions Tradition later this month.

“I think [Cellar 91] is a much-needed concept here because the facility we had in the past based on demand by members was kind of outgrown,” Halston said.

Member ideas played a role in the creation of Cellar 91 and Halston said those members’ opinions are important to the new restaurant’s success. Based on the popularity of the previous restaurant, as well as Cellar 91’s brand-new offerings, Halston is expecting to see a lot of Greystone golfers and residents walking through the doors.

“The demand is on, which is great,” he said.
