New pizzeria coming to The Summit

Pieology Pizzeria is opening one of its first Birmingham locations at The Summit.

The restaurant, which serves custom pizzas, will open on Aug. 27 at 325 Summit Blvd. – in between Zoe’s Kitchen and Steel City Pops.

“We are thrilled to bring the unique Pieology experience to the Birmingham community and we hope to inspire our guests to express their culinary creativity and build their perfect pizza without limitations, for one simple price,” said Joshua McBride, vice president of operations for Segovia Aslan Enterprises.

Segovia Aslan Enterprises, a California-based management company, will operate the store at The Summit.

Guests can build their own 11.5-inch pizza at Pieology, and the store offers eight sauce options, as well as meat, cheese, vegetables, herbs and spices. Most pizzas are $8 or less with unlimited toppings, according to a release from Pieology.

The Summit location will seat around 70 guests.

“I think it brings just another exciting food option to The Summit,” said The Summit public relations director Ed Collari.
