Inverness will get its own sushi burrito restaurant this summer as Wasabi Juan’s opens its third location.

Wasabi Juan’s will be located at 5037 U.S. 280 West and Jessica Toro Hardisson, kitchen manager and daughter of owners Luis and Barby Toro, said demolition is underway and they anticipate opening in late May or early June.

The restaurant launched in Avondale and opened a second location in Hoover, at River Oaks Village, in 2017.

Hardisson said a fourth store is also in the works, but the location has not been finalized.

“It was a door that God opened for us and we went with it. We are very excited to be there,” Hardisson said of the upcoming Inverness restaurant.

Wasabi Juan’s serves sushi ingredients prepared as burritos, tacos, nachos and more, along with chips and salsa and traditional sushi sides like edamame and kimchi. The menu includes both raw and cooked seafood choices.

Hardisson said the new location will serve the same menu and will have a similar feel to its sister restaurants, with the addition of a new kids’ table.

“We want the kids to feel welcomed and have a little fun while they are there,” she said.

The restaurant’s hours will be 11 a.m. to 9 p.m. Tuesday through Thursday, and 11 a.m. to 10 p.m. Friday and Saturday. Visit wasabijuan.com for more information.
