Ellen Prince, La Paz in Mt Laurel

Ellen Prince’s specializes in bringing people together for good fun and good food.

As the Director of Operations at La Paz In Mt Laurel, she helps to provide people with a place to enjoy their friends and family.

La Paz is a Mexican and Southwestern restaurant and catering service. Its menu offers many traditional Mexican favorites such as chicken quesadillas and fish tacos.

But it also has a few items that put a new twist on the originals. One La Paz favorite is the Texas BBQ Quesadilla. This yummy entrée is an overstuffed jalapeno tortilla with Monterey Jack cheese, cilantro cream and tamarind-basted BBQ chicken.

Prince oversees the process of making everything from scratch each day so that the Chile Con Queso and the Baja Fish Tacos can continue to wow their patrons’ taste buds.

“I was hooked on the restaurant business from the first restaurant job I had in 1990,” she said. “I’ve been involved in all aspects of the business, front and back of the house.”

The best part of her job is seeing happy customers leave the restaurant with smiles on their faces. The many regulars who have continued to frequent La Paz for years are one of the ways that Prince knows she is doing her job right.

For 28 years, La Paz has been serving what many have called Birmingham’s best Mexican food. Ellen Prince hopes to continue happily serving her customers with the best for many more years.
