For the June edition of What’s Cooking, we asked Eli’s Jerusalem Grill for a favorite summer sandwich recipe. Chef Eli Markshtien, who has 27 years of cooking experience, recommended beef or lamb shawarma.
The sandwich is light and full of flavor, Markshtien said, and leaves you satisfied without being too filling.
“This is one of the most popular sandwiches we have … and it’s my favorite too,” Markshtien said.
Beef or lamb shawarma
INGREDIENTS:
►Beef or lamb, thinly sliced
►Olive oil
►Black pepper
►Salt
►Paprika
►Cumin
Steps:
1. Marinate thinly sliced beef or lamb in olive oil.
2. Add black pepper, salt, paprika and cumin.
3. Cook meat rotisserie style or on a flattop until cooked to your liking.
Israeli salad
Ingredients:
►Tomatoes, diced
►Cucumbers, diced
►Onions, diced
►Parsley, chopped
►Salt
►Pepper
►Lemon
►Olive oil
Steps:
1. Mix together tomatoes, cucumbers and onions. Add chopped parsley.
2. Season with salt, pepper, lemon and olive oil.
Building the shawarma
Other ingredients:
►Pita
►Hummus
These items can be purchased at Eli’s.
Steps:
1. Slice top of pita to create a pocket.
2. Spread hummus in pita.
3. Fill pita 1/3 full of beef or lamb shawarma. Add a spoonful of salad.
4. Repeat until pita pocket is full.
